Here's one I put together today because a lot of my vegetables were nearing the end. This would be good as a side dish, a snack, or a light meal. It's also really quick and uses stuff we have in our pantry most of the time, so it's great for coming home from work or school and whipping together.

Stinky Breath Couscous

(1) small onion, chopped
(3) garlic cloves, minced
(4) carrots, chopped
(1) can fire roasted tomatoes, drained
(2 1/2 cups) vegetable stock, or water
(2 cups) couscous
(handful) red lentils

spices etc. (to taste):
-sugar
-sage
-cumin
-black pepper
-curry powder

Generally, you want 1 1/4 cup of water of vegetable stock per cup of couscous. I made a ton today because I wanted some for leftovers. Also, you could not drain the tomatoes and use less stock/water for a more tomato-y taste.

Add the stock or water to a pot and put the heat on medium high. Next add the lentils and carrot because they need the most cooking time. Liquid should be nearing a rolling boil. Cover for a few minutes.

Add the garlic, onion, and tomatoes, and all of the spices etc, except for the curry powder. Cover for a few more minutes.

Add the couscous, stir, and remove from heat. Cover the pot for about 5 minutes to allow the couscous to suck up all of that delicious broth. Fluff with a fork. Add curry powder. Eat with a fork.

Heres a simple recipe for peanut butter cookies that I remember from foods class with MRs. McVey:


Preheat oven to 375*


Mix:

1 cup peanut butter
1 cup sugar
1 egg


Place on nonstick pan and cook for about 10-13 minutes.

Spicy Black Bean Burgers

Don't buy those premade ones.

(1 16oz can) black beans, or soak ~10oz overnight
(1) egg or egg replacer
(1/2 cup) rolled oats
(1/2 cup) breadcrumbs
(3) garlic cloves, minced
(1) small onion
(to taste) cayenne pepper
(to taste) cumin

makes 4 patties (freeze extras!)

Rinse and drain the black beans. Put them into a mixing bowl and mush them up real nice. If you don't have a masher, the bottom of a drinking glass works well. Add egg, oats, breadcrumbs, garlic, onion and spices and mix together. You should be able to easily form the mixture into nice patties.

If you don't have both breadcrumbs or rolled oats, you can easily use just one.

No Bake Protein Bars

Tasty and cheaper than buying Cliff Bars. I bring these to work as a snack, use them on bike rides for energy, and sometimes have them as a desert. Very easy to make and quite versatile! The basic recipe can be changed to work with anyone's tastes (unless you're allergic to peanuts).

Basic recipe:
(3 cups) rolled oats
(1 cup) honey or maple syrup
(1 cup) peanut butter
optional: (1 cup protein powder + 1/2 cup honey)

I also add:
chopped walnuts
flax seed
chocolate chunks!

Heat up maple syrup/honey and peanut butter until runny and mixed. Then mix in protein powder and oats. Don't cook it, only heat it a little bit. Remove from heat.

Here is where I also add flax seed (blended into powder) and walnuts. If the mixture is too dry, add some more honey/maple syrup, and if it's too wet add more oats.

Press into a pan and let cool for a bit. I add chocolate chunks to the top. These are the stickiest of icky.
